Yes, you can track all changes made to a record through history tracking feature. However its not enabled by default. To enable history tracking for any field(s) of any record:


Go to Settings > Object Manager > Click on Record for which you want to enable history tracking > Click Fields & Relationships > Click on 'Set History Tracking' button on right hand side top corner > Select the fields for which you want to set the history tracking > Save


Once you enable a history tracking for any record, you can see the all change recorded as logs in 'Related' section when you open a record.
